ゆで卵といえば、ドイツで最も驚かされたことの一つが、卵のゆで方の違いだった。日本でゆで卵を作るには、卵は水からいれる。お湯から入れると、殻の内部にある空気が膨張し、殻が破裂してしまうからだ。ところがドイツではこの禁を犯す。それでも失敗しないのは、お湯に卵を入れる前に、何と針で殻に小さな穴を空けるのだ。尖っていない方の端に針を刺すのがコツで、通例空気はそちらの側にある。

こわごわドイツ人のまねをしてやってみると、なるほど普通の針で卵の殻に穴が空けられるものだし、それでといって卵全体が割れもせず、白味が流れ出もせず、お湯に入れると、プクプクとその小さな針穴から空気が出てきて、それで終わりである。6分で半熟、8分で固ゆでができるが、このゆで方で優れているのは、初めから殻に割れ目があって、殻と白味の間に水が入っているから、殻がむきやすく、失敗することがないのだ。是非お試し下さい。うちではもうゆで卵用の針が台所に常備してあるくらいである。卵に針で穴を簡単に空ける器具というものも売っている。これはまだ手にはいるし、日本でも見かける。
